  • ½ cup of Extra Virgin Olive oil.
  • 2 tablespoon stone ground mustard or dijon.
  • 2 tablespoons lemon, juiced.
  • 1 tablespoon honey
  • 1 teaspoon of lemon zest.
  • Salt & pepper to taste.

Method
 

  1. Combine all of the ingredients in a glass jar and shake well.
  2. You can also use a small bowl to whisk together the fresh lemon juice and mustard until well combined.
  3. Then, slowly drizzle in the extra virgin olive oil while whisking constantly to emulsify the dressing and finally season with salt and pepper to taste.
