Chicken Teriyaki Poke Bowl

Ingredients
  

For the Chicken Teriyaki:
  • 2 lbs chicken breast thighs, or tenderloins (What I use), cut into bite-sized pieces
  • 1/3 cup San-J - Organic Gluten Free Tamari Soy Sauce with 25% Less Sodium
  • 3 tbsp honey or brown sugar
  • 1.5 tbsp rice vinegar
  • 1.5 tbsp sesame oil
  • 1.5 tbsp grated ginger
  • 3 garlic cloves minced
For the Bowl Base:
  • 3 cups cooked jasmine rice or sushi rice adjust for desired portions
  • 1 tbsp rice vinegar optional for rice seasoning
Toppings:
  • 2 medium avocados diced
  • 2 medium cucumbers sliced thinly
  • 2 medium carrots shredded or julienned
  • 1 cup edamame shelled and cooked
  • 1 cup red cabbage shredded
  • 5 green onions sliced
  • 2 tbsp sesame seeds optional, for garnish
  • 1 sheet nori seaweed, cut into thin strips (optional)
Optional Sauce/Drizzle:
  • Sriracha mayo: Mix 1/2 cup mayo with 1-2 tbsp sriracha
  • Additional tamari sauce for serving

Equipment

  • 1 Cast Iron Skillet
  • 1 Glass Storage Containers

Method
 

Cook the Rice:
  1. Cook 3 cups of jasmine or sushi rice according to package instructions.
  2. Once cooked, fluff the rice and stir in 1 tbsp rice vinegar for extra flavor.
Prepare the Chicken Teriyaki:
  1. In a bowl, mix soy sauce, honey, rice vinegar, sesame oil, grated ginger, and garlic.
  2. Heat a skillet over medium heat and add a drizzle of sesame oil.
  3. Add the chicken and cook until golden on all sides (6-8 minutes).
  4. Pour the teriyaki sauce over the chicken and simmer for 3-5 minutes until the sauce thickens and the chicken is coated.
Prepare the Toppings:
  1. Dice, shred, or slice all the vegetables and toppings (avocado, cucumber, carrots, edamame, cabbage, green onions, and nori).
Assemble the Bowls:
  1. Divide the cooked rice among 5 bowls.
  2. Top with the chicken teriyaki.
  3. Arrange the toppings on the side: avocado, cucumber, carrots, edamame, cabbage, green onions, and any extras like sesame seeds or nori.
Optional Sauce:
  1. Drizzle with sriracha mayo or soy sauce for extra flavor.
Serve:
  1. Serve immediately and enjoy!
